Coolship 2024 Assemblage. 4.5% We’re at a point in our spontaneous coolship journey where we have barrels from multiple years to pull from, giving us a wide palette of age, depth, and character to work with. This Coolship blend was assembled and bottled in March 2024 from barrels of spontaneously fermented beer of various vintages. We’re currently getting notes of classic lambic funk, brettanomyces of the barnyard and the cherry pie varieties, juicy nectarines, comforting aged hops, tart white grapes, sweet aromatic grapefruit, high tide salt spray, and the rich SEPA terroir. The base beer for our Coolship is brewed each winter with barley and spelt from @DeerCreekMalt; and lots of aged hops; and rested in the coolship overnight to allow a natural inoculation of wild microbes to carry out the fermentation in used oak wine barrels. In March of 2024 we selected a blend of the most special barrels, and bottled it up. We let these bottles rest and the beer continue to ferment and condition for 18 months. Such a fun journey for such a special beer.
