The City In the Mirror - 750ml. Saison Bottle
The City in the Mirror - 5.5% Foeder Saison. This beer has taken its damn time getting out in the world. We brewed this one years ago, with @DeerCreekMalt barley and spelt; hopped it with Saphir and Hersbrucker; fermented with our Foraged Yeast Culture; and then aged it for years in one of our oak foeders. The microbial journey some of these beers take can be quite non linear; and in July of 2025, this one finally reached completion. We bottled it up and let it rest for a short secondary slumber. What we have now is a lovely Saison with a rich honey color unique to aged beers, with aromatic notes of oak aged fruit, tamarind soda, strawberry, wild pear, some grassy brettanomyces, and a nice apricotty acidity.
